Do hot boxes and sales coolers in a (beef) slaughter house require sprinkler protection?

Generic response: Depends on the area, height, construction type, and the other items to determine if sprinklers are required for any facility.

Glenn is correct, If the building is required to be sprinkled then all areas need to be sprinkled in accordance with NFPA 13. Exceptions to coverage for the hot box depends on what the size and use is for.

Further support for the generic response, also matters if the coolers and warmers are fixed or on wheels.

The IBC is the scoping Code identifying where automatic sprinkler systems (ASPS) are required (see IBC Chapter 9 Fire Protection and Life Safety Systems) and the referenced edition of the NFPA 13 is the standard for the installation of the ASPS.

Typically, hot boxes are fixed rooms within the facility. If the facility is required to have automatic sprinkler protection (per IBC, local fire code, or insurance underwriting criteria), then yes, there is no exclusion to leave this area unprotected.

Remember that not every state is a ICC state and the IBC/IFC may not apply. There are several places that the NFPA 1/101 are the code of record. It really doesn't matter as the NFPA 13 will dictate if a room can be except from coverage (very few exceptions). I agree with everyone who says "it depends", because it dose. without the plans in front of us we really cannot make a judgement either way. The rule of thumb is that it is required until you show me in the code the exception.

I dont know of any exceptions allowed for not providing suppression. I tried to exclude years ago but the USARMRY COE FPE stated exactly this..."Food is combustible, fats especially."
