Is there any reason in code (NFPA 13 or 20) that you cannot tie a Fire Department Connection (FDC) line to a pump bypass line as long as the FDC line is downstream of all control valves on the pump bypass?

By definition, if you tie in past your pump control valve and after the bypass check, you're on the system side of the pump.

Does your building have a single sprinkler riser or multiple risers? Or multiple standpipes and sprinkler risers?

No issue at all and done quite frequently. As long as it connects downstream of bypass check valve.

Yes you can as long as it downstream of the check valve along the bypass assembly.
