When can a fire sprinkler main simply run parallel to and directly underneath structure (such as an open-web joist), and when must is be located in-between joists and hung with trapeze hangers?

The simple answer is you can hang to the side any time.

I forgot to add that based on the structural engineer's design you may or may not need to trapeze that main, or reduce your hanger spacing.
