Would you consider this (Easy Up canopy) an obstruction that can be written up during an NFPA 25 annual inspection?

Not within the 25 report. It is not within the clearance requirements as defined in Section 5.2 of NFPA 25. 25 does not look at obstructions like this. If it were missing an escutcheon, was loaded, installed in the wrong orientation, was leaking, or a select few other things it would fall under the Scope of 25 for a write up.

The question is about violating NFPA 25 for the purpose of ITM standards. But from an AHJ perspective, who does annual fire and life safety inspections based upon IFC and NFPA 13 standards, this would be a violation, correct?

While that's a pretty dumb idea, its not permanently installed so it falls under temporary office furniture.

A loophole for the tent might be that there appears to be “ no sprinklers above the canopy” so it may be a “ non sprinklered building” or spray that would be blocked.

So if the building is protected by sprinklers, and the walls and ceiling was built as part of the display ( but not sprinklered) then the display room, requires sprinklers, and the tent removed.

The building is fully sprinklered.

This is not a 25 issue. It is a fire code enforcement issue.
